African Fire Bean Stew (V) (VGN)
Get ready to cook
1. In a pot, boil the sweet potato until cooked but firm; drain and set aside.
2. Place a saucepan over medium-high heat. Add peppers; stir fry for 3-4mins to soften.
3. Add Mozambican Coconut Piri Piri, cumin, chopped tomatoes, coconut milk and kidney beans; mix well.
4. Bring to boil then reduce heat to simmer for 20-30mins to desired consistency. Add cooked sweet potato; mix well. Garnish and serve.

1 tablespoon ground cumin
400ml tinned coconut milk
800g diced sweet potato
400g diced red peppers
600g tinned kidney beans
15g chopped coriander to garnish
