Chilli-Orange Chorizo Quesadilla
Get ready to cook
1. Pan fry diced chorizo in a non-stick pan for 2-3mins to release flavour.
2. In a bowl, mix chorizo, black beans, cheese, coriander and Mexican Chilli Orange Paste until combined.
3. Spread mixture equally over half of each tortilla. Leave about 1/2 inch border. Fold each tortilla over and press down on the edges to seal.
4. Place on a lined baking tray; brush lightly with oil and bake in a fan oven at 180°C for 10mins. Serve.
300g diced chorizo
300g tinned black beans
600g grated cheese (e.g. cheddar, red leicester)
30g chopped coriander
10 (8-inch) flour tortillas
