Indonesian Braised Pork Tacos with Grilled Pineapple
Get ready to cook
1. Heat some oil in a pan to medium-high heat. Add diced onion; lower heat and stir fry for 4-5mins to caramalise. Raise heat and add pork; stir fry for 1-2mins to brown. Add Nasi Goreng Paste; stir fry for 1-2mins. Add water; mix well. Bring to boil then lower heat; simmer for 45mins-1hr until tender and sauce reduces till sticky and coats pork. Once cooked, add lime juice and mix well.
2. In the meantime, sear the pineapple on a hot grill to brown.
3. To assemble, top each taco with braised pork, grilled pineapple, crushed peanuts and coriander. Serve.

1 lime, juiced
10 soft 6-inch mini tortillas
150g diced fresh pineapple
30g crushed peanuts, to garnish
30g chopped coriander, to garnish
