Lemongrass Mint Ground Chicken (Larb Gai)
Get ready to cook
1. Heat some oil in a large pan over medium-high heat; add minced chicken and stir fry for 5-6mins or until cooked. Set aside.
2. In the same pan, add some oil. Add green beans and mushrooms; stir fry at medium heat for 4-5mins or until cooked.
3. Remove from heat. Return cooked chicken. Add Lemongrass Sambal Paste, sweet chilli sauce, sliced red onion and chopped herbs. Mix well, add squeeze of lime and serve with white rice.
400ml sweet chill sauce
1.2kg minced chicken
300g diced green beans
300g diced mushrooms
200g thinly sliced red onion
30g chopped coriander
30g chopped mint
Half a lime
Optional: 2 tablespoons toasted glutinous rice (also called Thai sweet rice)

Lemongrass Sambal Paste
Foodie Tip: For an added foodie touch, toast two tablespoons of glutinous rice in a pan at medium-low heat for 10-15mins, stirring occasionally, until the grains turn golden-brown. Coarsely ground and toss into dish before serving.
