Peruvian Whole Roasted Chicken with creamy green dressing
Get ready to cook
1. Spatchcock the chicken by removing the backbone using a sharp knife or kitchen scissors.
2. Combine Nasi Goreng Paste with cumin and paprika. Rub mixture all over chicken, including the underside. Leave to marinate at least 30mins.
3. Place chicken on a roasting tray lined with parchment paper. Roast in a pre-heated fan oven at 180°C for 45-50mins or until cooked. Leave to rest for 10mins then carve into 4 portions.
4. For dressing, combine ingredients together. Serve with dressing on the side with fries.
