Smoky Cinnamon-Bacon Baked Rice
Get ready to cook
1. Heat a large pan to medium heat. Add a little oil and smoked bacon lardons; cook for 4-5mins until fat renders and lardons crisp up. Remove bacon from the pan and set aside. Retaining oil, add eggs and scramble until cooked.
2. Pre-heat oven to 160°C fan. To a large baking dish, add cooked rice, bacon, scrambled eggs, peas and carrots. Add Shandong Sweet Paste; mix well until rice is evenly coated.
3. Bake in the oven for 20-25 mins until piping hot. Garnish and serve.
450g Shandong Sweet Paste
500g smoked bacon lardons
500g eggs (approx. 10 large eggs)
450g frozen peas
450g shredded carrot
1.6kg pre-cooked rice
Optional: Chopped chives / crispy shallots to garnish
