Sri Lankan Shredded Coconut Prawns
Get ready to cook
1. In a sauce pan, stir fry onions until soft and golden. Add desiccated coconut; stir fry for 1-2mins. Add Sri Lankan Curry Paste, stir fry for 1-2mins.
2. Add coconut milk; mix well and heat through. Add prawns; heat until cooked and sauce thickens.
3. Garnish and serve with Chickpea Pilaf and naan bread.
800ml coconut milk
1.5kg shelled prawns*
200g diced white onion
100g desiccated coconut
15g chopped coriander to garnish
*if desired, substitute with:
1.2kg shelled prawns
300g cut green beans
